About the authors

Jungyoon Choi is a chef, culinary researcher, and writer with 26 years of experience working in Spain, Australia and Korea. She trained at Alicia Foundation and El Bulli and now serves as executive R&D chef of the Korean Culinary & Fermentation Research Center at Sempio Foods. Choi is also the Academy Vice Chair of Korea & China for World’s 50 Best Restaurants. Junghyun Park, known as JP Park, is a Seoul-born, New York City-based chef celebrated as ‘Best Chef: NY State (2023)’ by the James Beard Foundation. His credentials include Atomix (2 Michelin Stars, No. 8 World 50 Best 2023) and Atoboy, NARO, and Seoul Salon, all contributing to his reputation as a leading innovator of the New Korean movement.
